Liver sausages


From the heart of local tradition, “mazzafegate” are a highly seasonal product, available only between September and May; they were the most delicious dish made by local charcutiers.
Made using offal mixed with lean meat and guanciale, they have a stronger and more persistent flavour than ordinary sausages. The small amount of liver used in the mixture gives the sausages their distinctive colour.
